Food Design / Research Architectural Association 2023Oysters are one of the most environmentally friendly food choices out here, still many are disgusted by their alien appearance and association with unattainable luxury. How do we unlearn feelings of disgust and fear? The problem is usually the first confrontation. As an initiation ritual, inspired by exposure therapy, the "Date with an oyster” is an experience to face this aphrodisiac in a humorist way and hopefully convert oyster virgins into oyster lovers.
